2 C. sweet poatoes-cooked and mashed
2 C. sugar
1 can evaporated milk
4 eggs
1/2 t. lemon juice
1/2 t. vanilla
Cook pie shells about halfway before filling is placed in them. Bake pies at 325 for 45-50 minutes or until knife comes out clean.
I made pumpkin pies yesterday, and I remembered this recipe from aunt Joyce. It's very similar to pumpkin pies, but with a little variation. Enjoy!

Hi Jane,
We can't wait to try this recipe. It reminded me of the time when we were with Barrington up in Chicago visiting his parents, and his mom would not let us leave until we had polished off both of the sweet potato pies that she had made. They were scrumptious so Bethany asked for the recipe. Hers is quite rich though as she uses condensed milk! Thanks for sharing your aunt's recipe; it's somewhat satifying to know that you're getting all that vitamin A in a pie. : )
oh yum....too bad I'm trying to stay away from sugar...sounds so good.
